After a long day at work, all you want to do is sit back, relax and watch
your favorite reality television show. As you settle into your couch it suddenly
dawns on you that tonight is the weekly book club meeting… and it’s your
turn to host it.
You have forty minutes to go before the first guest is due to arrive. The
standard menu of your book club meetings consists of appetizers and a couple of
hearty side dishes.
You frantically scan the fridge and the cupboards. ..
A great way
out of this predicament is to always have the following ingredients in your menu
repertoire:
Side Salad
Lettuce,
shredded cheese, virgin olive oil, a spritz of lime juice and cracked pepper
Loaf of Bread
Baked or
unbaked
Dipping
Sauce
Garlic
cloves or red onions sautéed in virgin olive oil, a dash of cracked pepper.
Quick Recipes
Frozen
Pizza Delight
Ingredients
1 large frozen cheese pizza (either rectangular or circular)
1/4 cup of chopped red onions
1 chopped garlic clove
1/4 cup of chopped mushrooms
1 cup of pre-cooked chopped Polish sausage
Directions
Preheat oven per package instructions.
Spread the ingredients out evenly. Cook per package instructions
Let cool for a few minutes. Slice it up and enjoy!
Mushroom
Toast
Ingredients
1 slices of bread
1 tbsp chopped mushrooms
1 tbsp of shredded Swiss cheese
1 chopped garlic clove
2 tsp of oregano
1 tbsp of Extra Virgin Olive Oil
Directions
Pre-heat the oven to 400 degrees. Pour the tbsp of olive oil in a small bowl.
Add in the chopped mushrooms and garlic. Mix in the oregano. Place the slices of
bread on the aluminum foil on top of a cookie sheet. Spoon out the ingredients
from the bowl onto the slices of bread. Sprinkle shredded Swiss cheese on top of
the bread. Spread the mix and the cheese evenly on top of the bread.
Bake for 7-9 minutes or when the cheese has melted. Let cool for a few minutes
and then slice the bread diagonally and serve.
Lemon
Salad on the Go
Romaine or red leaf lettuce (can also use the pre-washed lettuce from the bag)
Shredded cheese
2 tsp Extra Virgin Olive oil
1 tbsp chopped Red onions
1 lemon wedge or lime wedge
black pepper or oregano
Ingredients
Romaine or red leaf
lettuce (can also use the pre-washed lettuce from the bag)
1/4 cup of shredded Swiss
or mozzarella cheese
2 tbsp chopped Red onions
1 lemon or lime wedge
1 tbsp black pepper or oregano
2 tsp of oregano
1 tbsp of Extra Virgin Olive Oil
Directions
Lightly dust the mixing bowl with the 2 tsp of the olive oil and the shredded
cheese. Add in the lettuce red onions and a generous helping of shredded cheese. Mix
together.
Sprinkle on black pepper and squeeze lemon wedge on top of the salad.
